Beef Goulash mince soup

Comfort food in a bowl.

From Week 2


Lunch & Dinner

Ingredients:

500 g Organic grass-fed Beef mince

1 Onion

2 cloves of Garlic

1 Parsnip, chopped

1 Carrot, chopped

1,5 Red Bell pepper

50 ml Tomato Puree

75 ml Red Wine

2 tbsp Beef fond/stock

3/4 tsp Cumin

1 pinch Cayenne pepper

1 tbsp Smoked Paprika

400 g Tomatoes, crushed and canned

0,5 L Water

2 Bay leaves

Salt and Pepper

Sour Cream

Parsley

Instructions: 

Fry the Beef mince in butter or EVOO. 

Add to a soup pot.

Fry finely chopped onion and garlic, stir in the chopped vegetables (parsnip, carrots and red pepper) and let them cook together for a while.

Add to the soup pot with ground beef. 


Stir in the other ingredients. 

Cook for 20 min on a lower heat.

Season the soup with salt and pepper. 

Serve with parsley and 1-2 tbsp sour cream/Smetana per serving.
